1 cup corn or rice flour
1 cup grated mozzarella cheese
1 cup zucchini
1 teaspoon oil
Salt and pepper
Tomatoes for sauce or cabbage for coleslaw, if preferred.
Cut the vegetables to make a stew, sautéing the tomato, garlic, onion, and pepper in the oil. Next, add the zucchini, salt, and pepper. Let it cool and add the cheese.
To make the dough, add water to the flour bit by bit until moist to get the desired consistency. Generally, the ideal consistency is achieved when the dough does not stick to your hands.
Heat the skillet. Then, lightly oil your hands and form the dough into little balls. Flatten the balls and fill them with the stew. Form them into a little ball again and flatten. Cook on both sides.
Serve according to taste, with sauce or coleslaw (cabbage, carrot, vinegar, and spices salad).
