Lentil Picadillo and Beans in a Pot Photos

Lentil Picadillo

Yields 8 Servings

Ingredients

1 pound lentils
1 medium carrot
2 medium potatoes
2 garlic cloves, chopped
½ cup onion, chopped
½ teaspoon salt
Pepper to taste

Directions

Cook the lentils in 2 cups of water and ½ teaspoon of salt. Cook on low heat for 15 to 20 minutes until the lentils swell.

While the lentils are cooking, cut the carrot and potatoes into small cubes. Add to the lentils and mix with the onion and garlic. Add pepper to taste.

Cook on low heat for another 10 minutes. The meal can be served with avocados and corn tortillas.

Beans in a Pot

Yields 8 Servings

Ingredients

1 pound black beans 
2 garlic cloves
½ cup chopped onion
2 epazote sprigs
1 teaspoon oil 
½ teaspoon salt
Pepper to taste

Directions

Cook the beans in 3 cups of water and ½ teaspoon of salt. Cook on low heat for 1 hour.

Sauté the garlic and onion in a skillet.

Add the sautéed mix to the beans with the 2 epazote sprigs.

Cook for another 30 minutes. The meal can be served with avocado, corn tortillas and cheese.
